The French chef Georges Auguste Escoffier, born in 1846 in Villeneuve-Loubet, is considered to be the definitive French Master Chef. With his book, ‘Guide Culinaire’, he achieved not only world fame, but also introduced the world to French haute cuisine. Signature dishes such as Homard à l’américaine or Pêche Melba are still served today all over the world.
