Two cultures, one plate - OMAKASE by Philipp Heid

Omakase - the Japanese way of «Chef’s Choice» - has been an integral part of the European and Asian fusion cuisine of star chef Philipp Heid in the PRISMA restaurant since 2020. Translated into English, Omakase means «I leave it up to you». The Omakase Menu takes the guest on a culinary surprise journey. The stages of the culinary experience are presented in a sharing style, according to the motto «Two cultures, one plate».

Midori: the future ist green.

The basis of the Midori Omakase is a pure vegetable menu.

Philipp Heid wants to become even more fair to the sustainable culinary future.

Under the name «Midori» (Japanese green), the PRISMA restaurant will be concentrating on vegetables in its Omakase menu from 13 November 2021.

Meat and fish still on offer as a «side dish»
In addition to the treasures from the «earth», the menu can be expanded with «side dishes» from «land» and «water». Fish and meat lovers can continue to enjoy exclusive components in their omakase trip. The guest and his wishes come even more to the fore, a visit to the PRISMA restaurant becomes even more of an experience.

Madame Sum Chef's Edition from Philipp Heid

«Two flavour bombs to steam. When a star chef's idea and Madame Sum's team come together, only the best can come out. Perfectly formed and packed with flavour, the dumplings feature in my omakase menu.»

Dimsum - that's Asia and that's why it belongs in the kitchen of top chef Philipp Heid. When it comes to dumplings, the creative and up-and-coming Swiss start-up Madame Sum is a must. Now the two are doing business together: Philipp Heid has developed two dumpling creations that are available both in the PRISMA restaurant and in Madame Sum's delivery service.

Philipp Heid focused on regionality, authenticity and exoticism when creating the dim sum: the dumpling with Küssnacht mountain cheese and the Japanese pickled plum "Umeboshi" surprises with its unadulterated, salty, but at the same time fruity-sour aroma. Another unusual combination is the dumpling with beef cheek yuzu truffle: the freshness of the Asian yuzu fruit is combined here with the richness of beef cheek braised for 36 hours and tasty black truffle.
